Clearspring Mirin is the secret ingredient in authentic Japanese cuisine and Mikawa Mirin is the finest available, still traditionally made using organically grown sweet rice and no added sweeteners. Use a little to add subtle sweetness to rice for sushi making and to round out the taste of stir-fries and teriyaki dishes. A little mirin enhances the flavour of marinades, vinaigrettes, tempura dips and noodle broths. Mirin from Mikawa region (old name for current Aichi prefecture, Japan) is considered to be the finest in Japan. It is produced by a traditional method of koji fermentation and careful ageing over 9 months.
