Traditional short buckwheat tagliatelle pasta (pizzoccheri) from Lombardy in Italy. The “Pastificio di Chiavenna” was born as a mill in 1868 in the centre of Chiavenna along the river Mera, the river water being exploited to produce the energy required to move both the millstones and the machines of the mill to produce this pasta. Today, the business runs on clean, green energy coming from the hydroelectric plant of Valtellina and produces a range of Moro brand buckwheat products inspired by local tradition. The company celebrated it’s 150 birthday in late 2018! Pizzoccheri itself is a type of short tagliatelle from Valtellina in Lombardy, Italy (near the Swiss border) which is made with the goodness of buckwheat and traditionally cooked along with Swiss chard or Savoy cabbage and potatoes and layered with Casera cheese and grated Grana Padano or Parmigiano Reggiano and finished with garlic and sage lightly fried in butter.
